Just Like That, I am Back

If I said I was back, would you believe me? Blogging is complicated, and there are so many "get rich quick" blogging schemes that make it look like you are a lost cause if you are not currently earning money blogging. And why are you even blogging if you don't have multiple streams of income and entertainment. If you don't have a brand? I do have this website, but I do not have Instagram, Twitter, TikTok (you don't want to see me dance), or whatever is next.  Heck, I haven't even updated this since before the pandemic. So why am I here, writing about being back and then, probably ghosting for another two years? Life has been rough. It's been painful and overwhelming. I am so thankful for you my readers, or what is left of you. I am so thankful you are reading this post. I am so thankful that you are still committed to making the world a more exciting and more sustainable place.  Keep up-cycling my friends, and you never know, I might be back again with an

Vegan Granola Tutorial

If you are anything like our family you are constantly buying bags of overpriced granola.

Well no more. Here is a full proof easy recipe that even a four year old can make. Best part is the granola is vegan. Most granola's use butter or some animal product. This one doesn't (Yeah!)

So how would you like a sweet bowl of this in the morning?

You will need:

  • Four cups of whole oats
  • 1/2 sunflower seeds (shelled)
  • 1/4 cup flax seed
  • 1/2 cup sweetened coconut flakes
  • 1/2 cup pressed coconut oil (easily found in the health food store)
  • 1/2 cup real maple syrup
  • 1/4 cup cocoa powder (I like chocolate you can use less or skip it all together)
  • Pinch of cinnamon
  • Dried fruit
Preheat your oven 300 degrees.

You will want to first conbine all of the dry ingredients in one bowl (oats, sunflower seeds, flax, coconut flakes). Set the dried fruit aside, you will add this in after it cooks.

Dry Ingredients

Mix the wet ingredients in a separate container. I like to put the cinnamon and cocoa in this mixture as well.

My favorite secret ingredient!
If the coconut oil is at room temperature and the maple syrup is not it will clump, just pop it in the microwave to make it liquid again.
I LOVE cocoa!
Four Year olds are great help in the kitchen.

Combine all ingredients and make sure they are mixed like crazy.

You will be spreading the mixture on a cookie sheet or two (I use two).

Pop it in the oven for 20 minutes, mix and then put back in the oven for another ten minutes until browned.

Take it out of the oven and mix in the dried fruit.

I bought this, but then decided I wasn't in the mood for mango granola so I picked all the mango's out.

Now you are ready to eat it! Store it in a tightly sealed container after it coos for up to two weeks and enjoy!
